Description
These delicious eggs are made for us in France with buttery salted caramel and ganache, and the use of a touch of ‘fleur de sel’ salt in the caramel intensifies the flavour.
Along with the garden and farmland bird eggs these are part of the Chocolate Detective’s Curated Collection – her very favourite products from a lifetime of tasting chocolate. These eggs are the same as the salted caramel in the cuckoo which were selected as a Best Buy and given 5 stars in Jeremy Lee’s (Quo Vadis) taste test for the Observer last Easter.
Successfully reintroduced to Britain in the 19th century, this secretive bird has survived in what remains of our native pine forest, mainly in Scotland. The male Capercaillie has a prolonged croaking song that accelerates rapidly followed by a cork-popping sound and hissing and gurgling noises thereafter!
Artwork is by Madeleine Floyd who has two lovely books of bird illustrations, ‘Birdsong’ and ‘Chickens, Ducks and Geese.’
