Tasting notes
People are always surprised when I tell them that really thin pieces of chocolate taste better than chunky bars of the same recipe. There’s something about the speed of the melt, and allowing good chocolate to just melt gives another level of experience. In this case I recommend trying the 71% organic 85g Grenada bar side by side with this broken chocolate. They are made with the same fine organic trinitario beans from the north and east of Grenada, with identical fermentation and roast. So any differences are down to very subtly different terroirs and vintage, times of harvest, plus the bar vs wafer taste.
