Galette des Rois, a French pastry typically enjoyed during the Epiphany celebration:

Ingredients:
- 2 sheets of puff pastry dough (round-shaped)
- 125g (4.4 oz) almond flour
- 100g (3.5 oz) granulated sugar
- 100g (3.5 oz) softened unsalted butter
- 2 eggs
- 1 tsp almond extract
- 1 tsp vanilla extract
- 1 whole almond (fève)
- Powdered sugar (for dusting)

Instructions:
1. Preheat your oven to 200°C (400°F).
2. In a mixing bowl, combine the almond flour, granulated sugar, softened butter, eggs, almond extract, and vanilla extract. Mix well until you obtain a smooth and creamy almond filling.
3. Place one sheet of the puff pastry dough onto a baking sheet lined with parchment paper.
4. Spread the almond filling evenly onto the center of the puff pastry sheet, leaving a border around the edges.
5. Insert the whole almond (fève) into the filling. Make sure it is well hidden.*
6. Cover the almond filling with the second sheet of puff pastry dough, and press the edges together to seal.
7. Use a knife to create decorative patterns or make small incisions on the surface of the puff pastry.
8. Brush the top of the galette with a beaten egg to give it a golden color when baked.
9. Bake in the preheated oven for about 25-30 minutes, or until the galette is puffed up and golden brown.
10. Once baked, remove from the oven and let it cool for a few minutes.
11. Dust the galette with powdered sugar before serving.
12. Traditionally, the galette is served slightly warm.
