We first tasted Tidal Rum in a tasting event at the Rendez Vous club. We are used to drinking excellent rum when we are visiting the Grenada Chocolate Company, so were surprised and delighted to find such a great rum being produced in the UK!
|
We found we had a lot in common with them – we love the way they use natural coastal ingredients from our British shores to infuse their product with a special flavour. They use Pepper Dulse (a smoked seaweed gathered in Jersey) in their rum, and we use foraged fennel seed from Kent in our white chocolate.

Foraged Ingredients
Chantal loves to forage along the sea shore near Walmer in Kent for her annual supply of fennel seed and Kazz does the same at low tide on the island of Jersey to collect a magical ingredient called Truffle of the Sea or Pepper Dulse which gives the Tidal Rum its unique flavour profile - to discover more watch this short video:

Ecuadorian origin 40% cocoa milk chocolate. Flavoured with Blackthorn Sea salt from the West coast of Scotland and given a light shimmer. Chantal, aka the Chocolate Detective, invented this recipe on a beach in Cornwall in 1998. Whether in bars, wafer thins or this ‘broken’ format sea salt milk chocolate has always been our best seller. The delicate Blackthorn sea salt enhances both the caramel and the delicate cocoa notes of the chocolate.

Another Chocolate Detective original recipe. Inspired by Chantal’s early childhood in Teheran, cardamom and white chocolate prove to be a classic combination – the cardamom brings a citrussy zing, while the foraged wild fennel seed from a pebbly beach in Kent brings fresh green notes. The small addition of sea salt balances the sweetness.
